This sausage roll recipe always takes me back to the time of year when they were a staple at almost all parties and social gatherings in our family.

Our house is always busy at Christmas and New Year’s, and everyone who visits asks if I’ve made my sausage rolls. I guess that means they like them.

I need to create many finger food recipes so there is always something ready for our guests to snack on.

This time of year, we always have guests coming and going, Mum making her Christmas cakes, milk toffee, and mincemeat pies.

There’s never a dull moment in our household.

Memories of sausage rolls hot out of the oven date back to when I was a child watching my mum and dad in the kitchen.

My dad’s task was always carving the turkey and making the appetizers, especially for our New Year’s bash (Hogmanay).

I always remember Dad making these little bite-size rolls that seemed to disappear as soon as they were on the table.

He was so precise in how the sausage rolls had to look and taste, and now I’m the same way.

Continuing The Christmas Tradition

I make these flaky sausage rolls but family-size portions to eat throughout the year, but I add just a bit of heat to boost my holiday recipe.

Sometimes I make a puff pastry as my dad did, but there’s nothing wrong with buying frozen puff pastry from the grocery store if you don’t have the time.

It’s inexpensive and will save you time, which many of us don’t have come November and December.

These appetizers are ideal for making ahead and freezing once cooked.

Ingredients

  • 1 packet of sausage meat
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 packet of Tenderflake puff pastry or homemade pastry
  • 1 cup real bacon bits (fry up some bacon 1/2lb and break it into bits)
  • 1/4 cup milk or 1 egg whisked for glaze

Instructions

  1. Mix the sausage meat, spices, and salt until they are well combined.
  2. Cook bacon and break it into bits.
  3. Add bacon to the mixture and stir well.
  4. Roll out the puff pastry until about 1 inch thick.
  5. Place half of the mixture into the centre of the pastry and spread it out slightly.
  6. Glaze the outer rim of the pastry with milk, then roll up the pastry.
  7. Repeat for the other half of the pastry
  8. Cut into the size required. Glaze with either egg or milk.
  9. Place in the oven.
  10. Once cooked, either serve immediately or let them cool.

      pastry and spread out slightly

    8. Cut into your preferred size. Glaze with either egg or milk
    9. Place in the oven.until golden brown and the sausage looks cooked
    10. Once cooked, either serve immediately or let them cool
