Thanks Leonie. Made this today. Did add 2 tblspns of dried chicken stock as that is what I am used to with Mum’s recipe. Love it. Won’t be slaving over the stove anymore.

I didn't have any creamed corn so, as I was halving the recipe (as it is only Kip and I), I halved the 420g tin of corn (scary that a 420g tin of corn only contains 260g of actual corn...) and made the creamed corn from the Cajun Creamed Corn recipe without the spices - worked really well. I replaced 50g of cream in that recipe with 50g of the water that the corn was canned in - just cos I didn't want to just tip it down the sink! (so only used 70g of cream)
As I halved the recipe, maybe I should have amended the cooking time to 10 mins in step 2. Was lovely but maybe a bit overcooked.
To circumvent the oldest child (ie. husband) saying it was bland (which it definitely was not) I mixed some chilli with soy sauce and sesame oil in a small bowl that could be added to the soup. We both added it but the soup was nice without it. This is great if you are cooking for a family with different spice needs?
1/2 the recipe served us with a bowl of soup and we each have leftovers for lunch...
