It’s no secret that I’m a huge fan of making homemade salad dressings. I’m also a lover of any kind of dip to serve with veggies and crackers. So, guess what? I’ve found a recipe that works for both of these obsessions.

To amp things up, even more, I’ve added extra lemon juice and fresh herbs to elevate the taste of this “sauce” to something special.

What Is Tahini?
Tahini is made by grinding sesame seeds turning them into a thick paste similar in texture to natural peanut butter.It’s most often found in Mediterranean and Middle East cuisines. Tahini is versatile, flavorful, very nutritious and when mixed with other ingredients, provides any dish a rich deep taste.

Fresh Chives and Dill
Lemon Juice
Honey or Maple Syrup
Salt & Pepper
Water
No fancy tools or euipment is needed for this recipe. All you need is:

To make things a bit easier on myself, I do use a citrus juicer and a garlic press.
Pro Tip: When making this dressing, whisk in the cold water last. Start with 2 to 3 tablespoons and add more until you get the consistency you want.

How To Store Tahini Dressing
Store this dressing in a sealed container in the fridge. It will keep well for about 1 week. It may thicken a bit but you can simply thin it with a little more cool water as needed.

Ingredients
½cuptahini (stirred well)
¼cupolive oil
1mediumlemon, juiced
1cloveminced garlic
1tablespoonhoney
1tablespoonchopped fresh chives
1tablespoonchopped fresh dill
salt and pepper
¼cupcold water
Instructions
In a small bowl, whisk together tahini and olive oil until smooth. The mixture will be thick. Add in lemon juice, minced garlic, honey, chives, dill, salt, and pepper. Whisk until well blended.
To thin dressing, start by whisking in 2 tablespoons of cold water adding more until desired constancy is reached. Serve immediately.
Notes
*Dressing can be store covered in the refrigerator in a sealed jar or container for about a week.
*As dressing chills, it will become thicker. To thin, whisk in cold water.

It's totally normal. Keep whisking, and you'll have a smooth, creamy tahini salad dressing in no time. If the dressing is still thicker than you'd like it to be, add more water, 1/2 tablespoon at a time, until it reaches your desired consistency.
Tahini sauce is a Middle Eastern condiment that is served with many dishes from the region. It's made with only 3 main ingredients: tahini paste, which is crushed sesame seeds, lemon juice, and garlic. Tahini is made by grinding toasted, hulled sesame seeds to create a creamy, smooth spread.
Bitterness is generally part and parcel of tahini - it's how ground sesame seeds taste. What you will find, however, is that some tahini can taste more bitter than others. This is down to a few things; like how that particular tahini is processed, or the levels of something called oxalic acid in the hulls of the seeds.
Although both are creamy and commonly used as condiments, the two have very different flavors and textures. Tahini is rich, nutty, and can be slightly bitter tasting. Mayonnaise is very smooth, light, and creamy. If you're interested in a mayonnaise recipe, try my healthy mayo recipe.
When a small amount of lemon juice (or water) is added to the tahini or peanut butter, the hydrophilic dry particles are drawn to the water. As a result, it clumps up. As water is added, more clumps develop, causing the tahini to thicken overall.
The taste will be sour, kind of metallic, and just plain weird. Utilizing a trusty sniff test is another way of finding out if it's time for your tahini to take a one-way trip to the bin. But something that's important to remember is that ground sesame seeds do naturally have a slightly earthy, bitter aftertaste.
If your tahini is dry, or if you prefer a thinner sauce, add more water, as needed, to reach your desired consistency. Then, taste and adjust your seasonings. If you prefer a brighter sauce, add more lemon. If it is too bitter, stir in 1/4 to 1/2 teaspoon maple syrup or honey.
Tahini paste is just ground sesame seeds. Period. In comparison, tahini sauce is made by thinning the paste to a consistency similar to a thick cream, typically by adding other ingredients. My family's recipe adds lemon juice, garlic, and olive oil to our tahini sauce.
Tahini has a nutty and earthy flavour and the lemon juice cuts through that. The key to a successful kofta is a good meat mix. Traditionally kofta is made with lamb meat, that makes for a moister and juicier kofta. My husband and kids find lamb too fatty and rich so I make my kofta with beef meat.
In most grocery stores, tahini is either in the aisle with other condiments like peanut butter or in the aisle with international foods. You can also find it at a specialty or Middle Eastern grocery. It is sold shelf-stable in glass or plastic jars and is not refrigerated.
