Growing up, fresh green beans were never something that was served in our house. My parents tried to push canned green beans on us many times, butit wasn’t a favorite vegetable of mine. To this day, I’m still not the biggest fan of canned cut green beans, however, I do like canned french style green beans. Of course, put either into a green bean casserole and I won’t turn it down. 🙂

As an adult, I’ve cooked with fresh green beans many, many times. While I’ll still admit that they aren’t my favorite vegetable, I find them far superior to their canned versions. Nowadays, I always make our Green Bean Casserole for Thanksgiving with fresh green beans and I also buy them throughout the year as a green bean side dish for dinner.

There are so many delicious ways you can cook and serve fresh green beans, but today I’m sharing a very simple, super easy idea. This easy Green Beans with Mushrooms recipe won’t take you very long, it leaves your green beans with a nice crunch (not soggy) and there is also only 3 main ingredients: green beans, mushrooms, and butter. Add a sprinkle of salt and pepper you’re good to go! Sure, it’s not as easy as heating up frozen or canned green beans, but I think you’ll agree that for a tiny bit more effort, these are wonderful.

Description

Make this Easy Green Beans with Mushrooms Recipein about 15 minutes for a quick side dish with only 3 ingredients: fresh green beans, mushrooms, and butter.

  • water for pot
  • 16 ounces fresh green beans (ends trimmed)
  • 23 tablespoons butter
  • 8 ounces mushrooms (sliced)
  • salt and pepper (to taste)

Instructions

  1. Fill a large pot with water (enough that it will cover your green beans). Bring the water to a boil. Add the greens beans to the water. Cook, uncovered untilbright green and crisp-tender (about 3-4 minutes). Drain and rinse with cold water until cooled. Drain off any excess water.
  2. In a large skillet over medium heat, melt the butter. Add mushrooms and cook uncovered for about 5 minutes.
  3. Add the green beans to the mushrooms and cook for another 3-5 minutes or until green beans reach desired tenderness (they should still have a nice crunch). Season with salt and pepper. Remove from heat and serve.

Notes

Adding 1-2 cloves of crushed garlic or cooked bacon bits near the end of the cooking is also delicious.
